If I unlock them now they start at lvl 70 but if I wait until Dawntrail will they start at 80? Still grinding MSQ, so it's not a must right now. Just wondering

No, both Reaper and Sage will still start at Lv.70.
In fact, it's the same for every job introduced so far.
Otherwise, past jobs like Red Mage (introduced in Stormblood, starts at Lv.50) or Gunbreaker (introduced in Shadowbringers, starts at Lv.60) would also follow suit.

    Yes. Agreed.

I wouldn't accept them starting jobs below 50 unless they fix how garbage gear works pre-50.

I'd also suggest not starting below 30 even if it's fixed simply because of how boring (and largely pointless learning wise) the early pre-dungeon phase is.

But its so quick today. If you have any account wide EXP boosting items its even quicker.

All jobs starting at level 1 would be good for new players, who are coming to the game fresh, don't want to skip the story, but say really want to play as Sage or Viper. Someone coming in to Dawntrail wanting to play PIcto has to get all the way to 80 to play the job they want to play. Which could suck. But at least you could play blm or smn to 50, where you get rdm as an option, and then swap to Picto at 80 with the same gear. Or use the starting gear new jobs come with. The only jobs that really suck for this IMO are the HW jobs DRK/MCH/AST. Because they start at 30 but by the time you get to Ishgard in the MSQ you'll be 50+, maybe even well on your way to 60 or beyond.

For returning players or new players that do story skip though, the new system is great because it lets you get into the current expansion that much faster. And it plays into the job system of older FF games of being able to unlock and swap to a new job without being set back that much. Starting the new jobs one expansion behind leaves some sort of barrier for people to get through and limit how many people are playing the new jobs day 1 in new content, but not a huge one that would be super annoying to grind through. I think it's a good balance.
